Whats new  in the Cellar

1-7-11, Today we bottled three barrels from our 2010 production. The 900 bottles were all bottled by hand in a matter of an afternoon. We had lots of hands on deck to make the job go as smoothly as possible. Our 2011 Cabernet Sauvignon was transferred from its neutral barrel to a second run French Oak barrel. While the barrel has been used once, there will still be some good Oak tannin extraction. A benefit to using a second run barrel is that the harsher tannins have already been extracted and the softer tannins will prevail.
